Ingredients

1 pound boneless, skinless chicken thighs, sliced into thin strips

2 tablespoons cornstarch

1 tablespoon vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

½ cup soy sauce (low sodium)

¼ cup brown sugar

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

1 green onion, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Chicken: In a bowl, toss the sliced chicken thighs with cornstarch until well-coated. This will give the chicken a nice crispiness once cooked.

Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Cook the Chicken: Add the cornstarch-coated chicken to the skillet and cook for about 5-7 minutes, or until browned and cooked through. Stir occasionally to ensure even cooking. Remove the chicken from the skillet and set aside.

Create the Sauce: In the same skillet, add minced garlic and ginger. Sauté for about 30 seconds until fragrant. Then, pour in the soy sauce, brown sugar, rice vinegar, sesame oil, and red pepper flakes. Stir to combine, and bring to a simmer.

Combine Chicken and Sauce: Add the cooked chicken back into the skillet with the sauce. Stir to coat the chicken in the sauce, cooking for an additional 2-3 minutes until everything is heated through and the sauce thickens slightly.

Garnish and Serve: Remove from heat and garnish with chopped green onions and a sprinkle of sesame seeds. Serve hot over rice or noodles for a delicious meal.
