Baked German Pancake

4 large eggs

1 cup whole milk

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon salt

1 teaspoon vanilla extract

1/4 cup unsalted butter

Fresh lemon juice (for serving)

Powdered sugar (for dusting)

Fresh berries or fruit (optional, for topping)

Instructions
 

Preheat your oven to 425°F (220°C). Place a large cast-iron skillet or baking dish (about 9x13 inches) in the oven to heat.

    In a mixing bowl, whisk together the eggs, milk, flour, sugar, salt, and vanilla extract until combined and smooth. Make sure there are no lumps.

      Once the oven has reached temperature, carefully remove the hot skillet. Add the unsalted butter to the skillet, allowing it to melt and coat the bottom evenly.

        Immediately pour the pancake batter into the hot skillet over the melted butter. It’s important to do this step quickly to ensure the pancake puffs up.

          Bake in the preheated oven for 20-25 minutes, or until the pancake is puffy and golden brown around the edges.

            Remove the pancake from the oven. It will deflate slightly as it cools, which is normal.

              Serve warm, drizzled with fresh lemon juice and dusted with powdered sugar. You can also top it with fresh berries or fruits for added flavor and color.
