Ingredients

1 cup pearl barley

4 cups water or vegetable broth

1 cup milk (dairy or plant-based)

1 tablespoon honey or maple syrup (adjust to taste)

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup diced apples or pears

1/4 cup raisins or dried cranberries

1/4 cup chopped nuts (walnuts, almonds, or pecans)

Fresh fruit (banana slices or berries) for topping

A sprinkle of chia seeds or flaxseeds (optional)

Instructions

Rinse the Barley: Start by rinsing the pearl barley under cold water to remove any dust or impurities.

Cook the Barley: In a medium-sized pot, combine the rinsed barley with 4 cups of water or vegetable broth. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 30-40 minutes, or until the barley is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

Add Flavorings: Once the barley is cooked, stir in the milk, honey (or maple syrup), cinnamon, and salt. Mix well to combine.

Incorporate Fruits and Nuts: Add in the diced apples or pears, raisins or dried cranberries, and chopped nuts. Allow the mixture to cook for an additional 5-10 minutes on low heat until everything is heated through and the porridge has thickened to your desired consistency.

Serve: Scoop the porridge into bowls and add fresh fruit slices on top. You can sprinkle chia seeds or flaxseeds for extra nutrition if desired.

Enjoy: Serve warm and enjoy this hearty and healthy barley porridge for breakfast or as a comforting snack!
