Carrot Apple Salad

Ingredients
  

2 large carrots, grated

1 large apple (preferably a sweet variety like Fuji or Honeycrisp), cored and grated

1/4 cup raisins or dried cranberries

1/4 cup chopped walnuts or pecans (optional)

1/4 cup plain Greek yogurt or vegan yogurt

1 tablespoon honey or maple syrup

1 tablespoon lemon juice

1/2 teaspoon ground cinnamon

Pinch of salt

Fresh mint leaves, for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and grated apple.

    Add the raisins (or dried cranberries) and chopped walnuts (if using) to the bowl, mixing them evenly with the carrot and apple.

      In a small bowl, whisk together the Greek yogurt, honey (or maple syrup), lemon juice, ground cinnamon, and a pinch of salt until smooth.

        Pour the yogurt mixture over the carrot-apple mixture in the large bowl. Gently toss everything together until well combined and the fruits and nuts are coated with the dressing.

          Taste and adjust sweetness if needed by adding more honey or maple syrup, if desired.

            Let the salad sit for about 10-15 minutes in the refrigerator. This allows the flavors to meld together and the salad to crisp up even more.

              Before serving, give the salad another gentle toss and garnish with fresh mint leaves if you like.
