Ingredients
  

1 cup rolled oats

2 cups almond milk (or your choice of milk)

1 medium carrot, finely grated

1/4 cup raisins

1/4 cup chopped walnuts (or pecans)

1 teaspoon cinnamon

1/2 teaspoon nutmeg

2 tablespoons maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

A pinch of salt

Cream cheese or Greek yogurt, for topping (optional)

Additional chopped walnuts, for garnish (optional)

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, grated carrot, and a pinch of salt over medium heat.

    Stir in the cinnamon and nutmeg, and bring the mixture to a gentle boil.

      Once boiling, reduce the heat to low and simmer for about 5-7 minutes, stirring occasionally until the oats have absorbed most of the liquid and are creamy.

        Add the raisins and chopped walnuts to the oatmeal, mixing well to incorporate.

          Stir in the maple syrup and vanilla extract, adjusting the sweetness to your taste.

            Remove from heat and let it sit for a minute to thicken slightly.
