Packed with tender russet potatoes, crispy bacon, sautéed onions, and colorful bell peppers, this hearty dish is topped with a blend of sharp cheddar and mozzarella cheese. 4 large russet potatoes, peeled and diced

8 slices of thick-cut bacon, cooked and crumbled

1 medium onion, finely chopped

1 bell pepper, diced (any color)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

6 large eggs

1 cup milk

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Chopped green onions for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 8 minutes, or until they are fork-tender. Drain and set aside.

      Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Transfer the bacon to a paper towel-lined plate to cool, then crumble it into bite-sized pieces.

        Sauté the Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté for 3-4 minutes, or until the vegetables are softened.

          Mix the Filling: In a large bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper until well combined. Add the cooked potatoes, sautéed vegetables, crumbled bacon, cheddar, and mozzarella. Gently fold everything together until evenly mixed.

            Assemble the Casserole: Grease a 9x13 inch baking dish. Pour the mixture into the dish, spreading it evenly.

              Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the eggs are set and the top is golden brown.

                Serve: Allow it to cool for 5 minutes before slicing. Garnish with chopped green onions if desired. Serve warm and enjoy your hearty breakfast!
