Cheesy Masala Beans on Toast

1 can (15 oz) kidney beans, drained and rinsed

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 green chili, finely chopped (adjust to taste)

1 teaspoon ginger, grated

1 teaspoon cumin powder

1 teaspoon coriander powder

1/2 teaspoon garam masala

Salt to taste

Freshly ground black pepper to taste

1/2 cup diced tomatoes (fresh or canned)

1/2 cup cream cheese (you can substitute with regular cheese if preferred)

1/4 cup shredded cheddar cheese (optional, for topping)

4 slices of whole grain bread

Fresh coriander leaves, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, green chili, and grated ginger, and cook for another 2 minutes until fragrant.

      Add the cumin powder, coriander powder, garam masala, salt, and pepper. Sizzle for a minute to release the aromas.

        Add the diced tomatoes to the skillet and cook for about 5 minutes, stirring occasionally, until the mixture is thickened.

          Gently fold in the kidney beans and cook for another 5 minutes to warm through.

            Reduce the heat to low, and stir in the cream cheese until fully combined and creamy. Allow it to heat through for an additional 2-3 minutes.

              Meanwhile, toast the slices of bread until golden brown.

                To serve, spoon generous portions of the cheesy masala beans over the toasted bread. If desired, sprinkle some shredded cheddar cheese on top.

                  Garnish with fresh coriander leaves and serve hot.
