1 lb boneless, skinless chicken thighs, diced

1 cup long-grain white rice

2 cups chicken broth

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons taco seasoning

1 tablespoon olive oil

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheese (cheddar or Mexican blend)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add diced chicken thighs, season with salt, pepper, and 1 tablespoon of taco seasoning. Cook until browned and cooked through, about 7-8 minutes.

    Sauté Veggies: Add the diced onion and minced garlic to the skillet with the chicken. Sauté until the onion becomes translucent, about 3-4 minutes.

      Add Rice and Liquids: Stir in the rice, black beans, corn, diced tomatoes, chicken broth, and the remaining taco seasoning. Bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is tender and has absorbed the liquid, stirring occasionally to prevent sticking.
