Cinnamon Sugar French Toast Muffins

Ingredients
  

6 slices of thick bread (such as brioche or challah)

3 large eggs

1 cup milk

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup brown sugar

2 teaspoons ground cinnamon (for topping)

Powdered sugar (for dusting, optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick spray or butter.

    Cut the thick bread into small cubes, approximately 1-inch in size, and set aside in a large mixing bowl.

      In a separate bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, 1 teaspoon of ground cinnamon, and salt until well combined.

        Pour the egg mixture over the cubed bread, ensuring all pieces are coated. Gently fold the bread and wet mixture together until combined, and let it sit for about 10 minutes to allow the bread to soak up the flavor.

          In a small bowl, combine the melted butter, brown sugar, and 2 teaspoons of ground cinnamon. Stir until everything is well mixed.

            Fill each muffin tin cavity with the soaked bread mixture, packing it lightly, and then drizzle the cinnamon-sugar butter mixture generously over the top of each muffin.

              Bake in the preheated oven for 18-20 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                Once baked, remove from the oven and allow the muffins to cool in the pan for about 5 minutes. Then, transfer to a wire rack to cool completely.

                  Optional: Dust with powdered sugar before serving for an extra touch of sweetness. Enjoy warm or at room temperature!
