1 cup cooked quinoa (cooled)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons lemon juice

Salt and pepper, to taste

Instructions
 

In a large mixing bowl, combine the cooked quinoa with the cherry tomatoes, cucumber, bell pepper, red onion, and parsley.

    In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create a dressing.
