Creamy Chicken Garlic Parmesan Pasta

8 oz fettuccine pasta

2 boneless, skinless chicken breasts

2 tbsp olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

1 cup spinach (fresh or thawed if frozen)

Fresh parsley, chopped for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Add chicken breasts and cook for about 5-7 minutes per side, or until cooked through and golden brown. Remove from skillet and let rest for a few minutes before slicing.

      Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and Italian seasoning, whisking until melted and smooth.

        Combine: Add the cooked pasta to the sauce, along with the reserved pasta water (a little at a time, until desired consistency is reached) and the spinach. Toss until everything is well-coated. Adjust seasoning with salt and pepper.

          Serve: Plate the creamy pasta and top with sliced chicken. Garnish with fresh parsley and additional Parmesan if desired.
