2 cups cooked rotisserie chicken, shredded

1 cup uncooked orzo pasta

1 cup Greek yogurt

1 cup chicken broth

1 cup diced cucumber

1 cup cherry tomatoes, halved

1/2 cup crumbled feta cheese

1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

Juice of 1 lemon

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the cooked rotisserie chicken, uncooked orzo pasta, Greek yogurt, chicken broth, diced cucumber, cherry tomatoes, feta cheese, dill, minced garlic, olive oil, lemon juice, salt, and pepper. Mix well until all ingredients are evenly coated.

      Transfer the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

        Cover the dish tightly with aluminum foil and bake for 25 minutes.

          After 25 minutes, remove the foil and bake for an additional 15-20 minutes or until the orzo is tender and the casserole is bubbly.

            Let the casserole sit for 5 minutes before serving to allow it to set slightly.

              Garnish with additional fresh dill and lemon wedges if desired.
