1 lb boneless, skinless chicken breasts

1 cup long-grain white rice

1 ½ cups chicken broth

1 medium cucumber, diced

1 cup plain Greek yogurt

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Juice of 1 lemon

Salt and black pepper to taste

½ teaspoon paprika

½ teaspoon cumin

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large baking dish, spread the uncooked rice evenly across the bottom.

      Pour the chicken broth over the rice, ensuring it is evenly covered.

        In a mixing bowl, combine the diced chicken breasts, olive oil, minced garlic, paprika, cumin, salt, and pepper. Toss until the chicken is well coated.

          Arrange the seasoned chicken on top of the rice in the baking dish.

            Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 40 minutes.

              While the chicken and rice are cooking, prepare the tzatziki sauce. In another bowl, mix the Greek yogurt, diced cucumber, fresh dill, lemon juice, salt, and pepper until well combined. Adjust seasoning to taste and refrigerate until serving.

                After 40 minutes, remove the foil from the baking dish and bake for an additional 10-15 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F/75°C) and the rice is tender.

                  Let the dish rest for 5 minutes before serving. Fluff the rice with a fork, and serve the chicken over the rice drizzled with the tzatziki sauce.
