3 medium Yukon gold potatoes, diced

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, chopped

4 slices of bacon, chopped

4 large eggs

1 cup shredded cheddar cheese

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: sliced avocado and hot sauce for serving

Instructions
 

Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove bacon and drain on paper towels, leaving the bacon fat in the skillet.

    Sauté the Vegetables: In the same skillet, add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften. Add the chopped onion and bell peppers, then season with smoked paprika, garlic powder, salt, and pepper. Continue to cook for another 10-15 minutes, stirring frequently, until the potatoes are golden brown and tender.

      Add Bacon: Once the vegetables are cooked, add the crispy bacon back into the skillet and mix everything until well combined.

        Cook the Eggs: Make four small wells in the hash mixture and crack an egg into each well. Cover the skillet with a lid and cook for about 5-7 minutes, or until the egg whites are set, and the yolks are still runny (or until desired doneness).

          Cheese It Up: Remove the lid and sprinkle shredded cheddar cheese over the entire hash. Replace the lid for another 1-2 minutes to allow the cheese to melt.
