2 large apples (Granny Smith or Honeycrisp recommended)

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon cinnamon

¼ teaspoon salt

1 large egg

¾ cup milk

2 tablespoons granulated sugar

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

Additional cinnamon and sugar mixture for dusting (1 tablespoon cinnamon with 2 tablespoons sugar)

Prep the Apples: Core the apples and slice them into rings about ½ inch thick. Remove any seeds and set aside.

    Make the Batter: In a mixing bowl, whisk together the flour, baking powder, cinnamon, and salt. In another bowl, beat the egg and add the milk, sugar, and vanilla extract. Combine the wet ingredients with the dry ingredients until just mixed (a few lumps are okay).

      Heat the Oil: In a deep skillet or pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C), or until a drop of batter bubbles and sizzles when added to the oil.

        Fry the Rings: Dip each apple ring into the batter, allowing the excess to drip off. Carefully place the battered apple rings in the hot oil. Fry in batches, about 2-3 rings at a time, for about 2-3 minutes on each side or until golden brown. Adjust heat as necessary to prevent burning.

          Drain and Season: Remove the fried apple rings and let them drain on paper towels. While still hot, sprinkle the cinnamon-sugar mixture over the apple rings for added sweetness and flavor.
