Ingredients

1 pound boneless, skinless chicken breasts, diced

16 oz potato gnocchi (store-bought or homemade)

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface, about 2-3 minutes. Drain and set aside.

Sauté Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the diced chicken, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and cherry tomatoes. Sauté for about 2-3 minutes until the garlic is fragrant and the tomatoes are softened.

Make the Sauce: Pour in the chicken broth and bring to a simmer. Add the heavy cream and bring to a low simmer. Stir in the grated Parmesan cheese until melted and well combined.

Combine Everything: Add the cooked gnocchi, sautéed chicken, and baby spinach to the skillet. Gently toss everything together and cook for an additional 3-4 minutes until the spinach is wilted and everything is heated through.

Serve: Taste and adjust seasoning if necessary. Garnish with fresh basil if desired before serving.
