Hobo Casserole with Ground Beef & Potatoes – Quick & Delicious!

This comforting Hobo Casserole with Ground Beef and Potatoes is the perfect weeknight dinner! With layers of seasoned beef, fresh vegetables, and gooey cheddar cheese, it comes together easily and is ready in just one hour. Simply brown the beef, sauté some onions, and layer everything in a baking dish for a delicious meal that serves six. Packed with flavor and perfect for feeding the family, this dish is sure to become a favorite!

1 lb ground beef

4 medium potatoes, peeled and thinly sliced

1 medium onion, chopped

1 can (14.5 oz) diced tomatoes, undrained

1 cup green beans, fresh or frozen

1 cup cheddar cheese, shredded

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 tablespoon Worcestershire sauce

2 tablespoons olive oil

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Brown the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain excess fat if necessary.

      Sauté Vegetables: Add the chopped onion to the skillet with the ground beef. Cook until the onion becomes translucent, about 3-4 minutes. Stir in the garlic powder, onion powder, Worcestershire sauce, salt, and pepper.

        Layer Ingredients: In a greased 9x13 inch baking dish, layer half of the sliced potatoes at the bottom. Add half of the beef mixture on top of the potatoes, followed by half of the green beans and half of the diced tomatoes (with juices). Repeat the layering process with the remaining potatoes, beef mixture, green beans, and tomatoes.

          Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top layer.

            Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 40-45 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the potatoes are tender and the cheese is bubbly.
