Lemon Basil Pasta Salad - Plant Based RD

8 ounces of whole grain pasta (fusilli or penne)

2 cups cherry tomatoes, halved

1 cucumber, diced

1 cup bell pepper, diced (any color)

1/4 red onion, finely chopped

1/2 cup fresh basil leaves, torn

1/4 cup olives, pitted and sliced (optional)

1/4 cup extra virgin olive oil

Juice and zest of 1 large lemon

2 tablespoons apple cider vinegar

1 teaspoon garlic powder

Salt and black pepper to taste

1/4 cup nutritional yeast (for a cheesy flavor, optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to the package instructions until al dente. Drain and rinse with cold water to cool down. Set aside.

    Prepare the Vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, and olives (if using). Toss gently.

      Make the Dressing: In a separate small bowl, whisk together the olive oil, lemon juice, lemon zest, apple cider vinegar, garlic powder, salt, and black pepper. Adjust seasoning to taste.

        Combine Ingredients: Add the cooked pasta to the bowl of vegetables. Pour the dressing over the pasta salad and toss to combine. Gently fold in the fresh basil leaves and nutritional yeast (if desired).

          Chill and Serve: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature. Enjoy!
