1 lb (450g) boneless, skinless chicken breasts

1 cup orzo pasta

2 tablespoons olive oil

1 small onion, diced

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

2 cups low-sodium chicken broth

1 cup cherry tomatoes, halved

1 cup baby spinach

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Sear the Chicken: In a large skillet or sauté pan, heat 1 tablespoon of olive oil over medium-high heat. Season the chicken breasts generously with salt and pepper. Add them to the pan and sear for about 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the pan and set aside.

    Sauté the Aromatics: In the same pan, add the remaining tablespoon of olive oil. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic, dried thyme, dried oregano, and red pepper flakes (if using), cooking for an additional minute until fragrant.

      Cook the Orzo: Add the orzo to the pan, stirring it to coat in the oil and aromatics. Pour in the chicken broth and bring it to a gentle simmer. Cook uncovered for about 8-10 minutes, stirring occasionally, until the orzo is al dente and most of the liquid has been absorbed.

Return the seared chicken to the pan, nestling it into the orzo mixture. Allow everything to cook together for an additional 2-3 minutes until the spinach wilts and the chicken is heated through.
