Made with Pumpkin Spice Oreo cookies, creamy pumpkin puree, and a hint of pumpkin pie spice, these no-bake delights are rolled into bite-sized balls and coated in smooth white chocolate. 1 package (15.6 oz) Pumpkin Spice Oreo cookies

8 oz cream cheese, softened

1 cup pumpkin puree

1 teaspoon pumpkin pie spice

1 cup white chocolate chips

1 tablespoon coconut oil

Optional: pumpkin spice for sprinkling

Crush the Oreos: In a food processor, crush the Pumpkin Spice Oreo cookies until they form fine crumbs. Transfer the crumbs to a large mixing bowl.

    Mix the Filling: Add the softened cream cheese, pumpkin puree, and pumpkin pie spice to the bowl with the Oreo crumbs. Mix well until everything is thoroughly combined and a sticky dough forms.

      Form the Balls: Use a tablespoon to scoop out the mixture and roll it into bite-sized balls (about 1 inch in diameter). Place the balls on a parchment-lined baking sheet.

        Chill: Refrigerate the shaped balls for about 30 minutes, until firm.

          Melt Chocolate: In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until completely melted and smooth.

            Coat the Balls: Once the pumpkin Oreo balls are firm, dip each ball into the melted white chocolate, ensuring it’s fully coated. Use a fork to lift it out, allowing excess chocolate to drip off.

              Set: Place the chocolate-coated balls back onto the parchment-lined baking sheet. Sprinkle with a little pumpkin spice, if desired, for a decorative touch.

                Refrigerate Again: Let the balls set in the fridge for another 15-20 minutes to harden the chocolate.
