Slow Cooker Indian Butter Chicken

2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1 medium onion, finely chopped

4 cloves garlic, minced

1-inch piece ginger, grated

1 can (15 oz) crushed tomatoes

1 cup coconut milk or heavy cream

4 tablespoons butter

4 tablespoons tomato paste

2 tablespoons garam masala

1 teaspoon cumin

1 teaspoon turmeric

1 teaspoon chili powder (adjust for spice level)

1 teaspoon sugar

Salt to taste

Fresh cilantro, for garnish

Cooked basmati rice or naan, for serving

Instructions
 

Prepare the Chicken: In a large bowl, combine the chicken pieces, salt, turmeric, cumin, and chili powder. Mix well to coat the chicken evenly with the spices.

    Cook the Aromatics: In the slow cooker, add the chopped onion, minced garlic, and grated ginger. Pour in the crushed tomatoes, followed by the tomato paste and butter.

      Combine Ingredients: Place the seasoned chicken pieces on top of the mixture in the slow cooker. Stir gently to combine, ensuring the chicken is covered by the tomato and spice mixture.

        Add Coconut Milk: Pour the coconut milk (or heavy cream) into the slow cooker. Stir to incorporate all the ingredients together.

          Slow Cook: Cover the slow cooker and set it on low. Cook for 6-8 hours or on high for 4 hours, until the chicken is tender and fully cooked.

            Finish the Cooking: Once cooking is complete, stir in the garam masala and sugar. Taste and adjust seasoning with salt if needed.
