1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chocolate chips (milk or semisweet)

1 cup mini marshmallows

1 cup crushed graham crackers (about 8-10 pieces)

Extra chocolate chips and marshmallows for topping

Instructions
 

Preheat the oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

      Beat in the eggs one at a time, followed by the vanilla extract, until well combined.

        In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

          Fold in the chocolate chips, mini marshmallows, and crushed graham crackers into the dough.

            Spread half of the cookie dough evenly into the prepared baking pan. Press down gently to create an even layer.

              Sprinkle extra chocolate chips and mini marshmallows over the first layer of cookie dough, then top with the remaining cookie dough, spreading it evenly.

                Add more chocolate chips and marshmallows to the top for a gooey finish.

                  Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and the center is set (it might look slightly underdone due to the marshmallows).

                    Remove from the oven and let it cool in the pan for about 10-15 minutes. Use the overhanging parchment paper to lift the cookie bars out and allow them to cool completely on a wire rack before slicing.
