Strawberry Peach Crisp

2 cups fresh strawberries, hulled and sliced

2 cups fresh peaches, peeled and diced

1 cup granulated sugar, divided

2 tablespoons lemon juice

1 teaspoon vanilla extract

1 cup old-fashioned rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup cold unsalted butter, cut into small pieces

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Fruit Filling: In a large mixing bowl, combine the sliced strawberries and diced peaches. Add 1/2 cup of granulated sugar, lemon juice, and vanilla extract. Gently stir the mixture until the fruit is evenly coated. Pour this fruit mixture into a greased 9x13 inch baking dish.

      Make the Crisp Topping: In a separate bowl, combine the rolled oats, flour, brown sugar, remaining 1/2 cup of granulated sugar, ground cinnamon, and salt. Mix well. Add the cold pieces of butter to the oat mixture. Using your fingers or a pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs.

        Assemble the Crisp: Evenly spread the oat topping over the fruit mixture in the baking dish.

          Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit is bubbly.

            Cool & Serve: Once baked, remove the crisp from the oven and allow it to cool for about 10 minutes before serving. It's delicious served warm, with a scoop of vanilla ice cream or whipped cream on top!
