Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch (20x20 cm) baking pan with parchment paper, leaving some overhang for easy removal.

    Make the Brownie Layer:

      - In a mixing bowl, whisk together the melted butter and granulated sugar until well combined.

        - Add in the eggs and vanilla extract, and mix until smooth.

          - Sift in the cocoa powder, flour, salt, and baking powder. Stir until just combined (the batter will be thick).

            Make the Cookie Layer:

              - In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

                - Beat in the egg and vanilla extract until combined.

                  - In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.

                    - Fold in the chocolate chips.

                      Layer the Batters:

                        - Pour the brownie batter into the prepared baking pan, spreading it evenly.

                          - Next, carefully drop spoonfuls of the cookie dough over the brownie layer. Use a spatula or the back of a spoon to spread the cookie layer evenly over the brownie.

Bake: Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs (not completely dry).

                              Cool and Optional Drizzle:

                                - Allow the brownies to cool in the pan for about 10 minutes. If desired, melt the additional chocolate chips in a microwave or over a double boiler and drizzle over the cooled browkies.

                                  - Remove from the pan using the parchment overhang, and cut into squares.

Serve: Enjoy your fudgy and chewy browkies warm, or store them in an airtight container at room temperature for up to 5 days.
